At the helm of the kitchen is Head Chef Arentas, who began his journey with the company over a decade ago. Alongside his dedicated team, Arentas prepares much of the food in-house, giving every dish a distinct and memorable flavour. Local sourcing is a priority, with products such as fresh eggs from Corrib Eggs, brown bread and scones from Bridie Murphy, sourdough from Soho Bakery, and crisp salad leaves delivered by Donnacha when in season.
